Happy April Fools!

There are a few days of the year that really fill me with glee!  Christmas of course would be my number one day of the year.  I’m still very much a kid and just love Christmas!  I would say my birthday would be second, but since I’ll be approaching 40, er I mean 35 (again), that one has moved to the back of the line!  Halloween is another fun-filled one and lastly I love April Fool’s Day!  What other day of the year, can you pull silly little pranks on all your loved ones without a side of guilt!!!!  I’ve been plotting  my pranks for a few weeks.  I had to make sure they were harmless pranks, because my kids are old enough to get me back.   Let me recap our day for you, feel free to store these ideas away for next year.  We switched out the clothes in our son and daughter’s rooms last night.  When my son went to get dressed this morning his reaction was perfect: “hey, I have girl clothes!”  snicker, snicker.  Lets see, we salted their toothbrushes, had fake snot blow out of our noses, stuffed tissues in their shoes and flavored their water with the lemons!!! The grand finale was dessert for dinner with dinner being a meatloaf cupcake and dessert being cupcake hamburgers!  It was the perfect end to a perfect day!  I’ve already researched what to do for next year.  I’ll have to up the ante a bit since my kids will be older and will be able to tolerate more tomfoolery.  As we continue our cat and mouse game each April 1st, the trick for me will to always be one step ahead of my kids.   Maybe one day, I’ll just give in and let them fool me, you know boost their confidence.  That’s what mothers are supposed to do right?  But for now, my goal is to get them so good, they are left with the proverbial “egg on their faces”.  And that’s no yolk!



1 cup butter

2 1/4 cups sugar

3 tbs Kahlua coffee liquor

1 tbs espresso powder

1 14 cups cocoa

1tsp salt

1 tsp baking powder

1 tbs vanilla extract

4 large eggs

1 1/2 cups flour

1 9oz package white chocolate M & M’s

Heat oven to 350.  In a large microwave safe mixing bowl, heat until butter is melted.  Add sugar, coffee liquor and espresso powder and stir unit combined.  Return to microwave and heat for only a minute two, to dissolve the sugar a little more.  Stir in cocoa, salt, baking powder and vanilla.  Whisk in the eggs.  Add the flour and your candies and stir until combined.  Pour batter into a greased 9 x 13 pan.  Bake for 28 to 30 minutes or until set.   Let cool on a baking rack.
